BELTERS CHOCOLATE BOURBON BANANA BREAD
"Ah waaaaaaa ooooooooh!" - Wicked the Musical
So, if you live in the DC/MD/VA area and you haven’t heard
of Carolyn Cole you are probably very pale, because you have never left your
home.
First of all, Carolyn’s voice is f-ing crazy! It’s the type
of voice where if you had to sing after it, like at an audition, you’d probably
just leave. Like, after she’s done singing I get really excited, and then
really sad, because, well, in order for me to sing like that, I have to be
lip-synching.
She’s also really nice. Like, I have never heard a bad word
said about Carolyn Cole. In the theatre world, this is a very big deal. Most
conversations I’ve had involving Carolyn Cole go something like this:
PERSON: Do you know Carolyn Cole?
ME: Yes! God, I love her!
PERSON: Me, too!
ME: And that voice!
PERSON: Ugh, I know.
ME: Right?!
Unless there are three people and then it goes like this:
PERSON: Do you know Carolyn Cole?
ME: Yes! God, I love her!
PERSON: Me, too!
ME: And that voice!
PERSON: Ugh, I know.
ME: Right?!
NEW PERSON: What are you guys talking about?
ME: Carolyn Cole.
NEW PERSON: God, I love her!
PERSON: Me, too!
ME: And that voice!
NEW PERSON: Ugh, I know.
ME: Right?!
This is Carolyn:
Anyway, the major reason for this post is that Carolyn Cole
is leaving our DC/MD/VA area and moving on to new things. So, in her honor, I
have baked her a banana bread fit for a rockstar, adapted from a recipe by Joy
the Baker.
INGREDIENTS:
- 2
cups all-purpose flour
- 3
tsp baking powder
- ½
tsp salt
- 1
stick unsalted butter (softened)
- 1
cup sugar
- 2
eggs
- 1
½ cups mashed very ripe bananas
- 1
tsp lemon juice
- 2
Tbsp bourbon
- 1
cup coarsely chopped walnuts
- 1
cup dark chocolate chips
DIRECTIONS:
- Preheat the oven to 350 F
- Grease and flour a 9x5-inch loaf pan. Place a piece of wax paper on the bottom of the pan to remove the cake easily. (I generally just flip the pan over and then cut out a piece of wax paper the size of the pan and then it’s just the right size)
- In a medium bowl whisk together the flour, baking powder, and salt.
- Use a hand mixer to beat together the butter and sugar for about 3 minutes, until everything’s all light yellow and fluffy like frosting.
- Add the eggs one at a time and beat the ingredients together for about a minute between each addition.
- Add the bananas, bourbon, and lemon juice. Beat the ingredients together until combined.
- Add the flour all at once and beat the ingredients together on low until they are mostly incorporated. Be careful not to over beat the ingredients.
- Use a rubber spatula to gently fold in the chocolate chips and walnuts, and to incorporate the rest of the ingredients together.
- Spoon the dough into the loaf pan.
- Bake for about an hour, or until a skewer comes out clean from the center of the cake.
- Wait 20 minutes before inverting the cake onto a serving plate.
- REMEMBER TO REMOVE THE WAX PAPER!
Eat while listening to Eden Espinoza, Shoshana Bean, and
perhaps, even, Carolyn Cole, and mouthing the words while swallowing bits of
chocolate, bourbon, banana goodness. No one’s watching.
